kert 2bb959a240 fix deploy: add registry to buildx steps, fix uv build module-name ...

- Add registry: localhost:3000 to all buildx steps in deploy.yml and
  rebuild-all.yml so auth targets the Gitea registry, not Docker Hub.
- Add explicit module-name list to pyproject.toml so uv_build finds
  the namespace packages instead of looking for src/stack/.
