fix gitea: remove :ro from custom mount, use inject-favicon

The :ro flag on ./gitea/custom prevented Docker from creating file
mountpoints inside it (for the CSS theme bind mount). Replace gitea
favicon/logo volume mounts with Traefik inject-favicon middleware.
